Easy Vegetable Chowder


Ingredients

  • 5 cup chopped vegetables-celery, carrots, peppers, broccoli, corn
  • 1/2 cup diced onion
  • 3 tbsp butter
  • 4 1/2 cup chicken broth
  • 1 1/2 cup milk
  • 1/4 cup flour
  • 1 tsp sage
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup Parmesan cheese

Directions

  1. Melt butter in a large saucepan. Add onion, all 5 cups of vegetables, and half the broth.
  2. Cover and cook on medium heat for 10- 12 min. until vegetables are soft.
  3. Whisk in flour.
  4. Whisk milk and seasonings. Stir into vegetables. Add remaining broth.
  5. Simmer for 15- 20 minutes.
  6. Stir in cheese right before serving- heating just until it's melted.
