Zucchini Cake with Cream Cheese Icing


Ingredients

  • 2 1/2 cup flour
  • 2 cup sugar
  • 1 1/2 tsp ground cinnamon
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup vegetable oil (or 1/2 c oil and 1/2 c applesauce)
  • 4 eggs
  • 2 cup shredded zucchini
  • 1/2 cup chopped walnut, optional
  • Frosting
  • 3 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 1 tbsp milk
  • 1 tsp vanilla extract
  • 2 cup 10x sugar

Directions

  1. Preheat oven to 350.
  2. Combine flour, sugar, cinnamon, salt, baking powder, and baking soda.
  3. Combine oil and eggs. Add to dry ingredients and mix well.
  4. Add zucchini. Stir until thoroughly combined.
  5. Fold in walnuts, if desired.
  6. Pour into a greased 9 X 13 pan.
  7. Bake at 350 for 35- 40 minutes. Cool well before frosting.
  8. Frosting: In a small bowl, beat cream cheese, butter, milk and vanilla until smooth.
  9. Add 10x sugar and mix well.
