Ingredients

1 lb chicken breasts, diced

1 (1.27 oz) packet fajita seasoning

1 tbsp vegetable oil

2- 3 peppers, chopped

1 onion, chopped

10 (10 in) flour tortillas

1 (8 oz) package shredded Cheddar cheese

cooked bacon
-
1 (8 oz) package shredded Monterey Jack or Colby cheese
Directions

Preheat the broiler. Spray a cookie sheet.

Toss the chicken with the fajita seasoning. Then spread on the baking sheet.

Place under the broiler and cook until the chicken pieces are no longer pink in the center, about 5 minutes.

Preheat the oven to 350.

Heat the oil in a large pan over medium heat. Stir in the peppers, onions and chicken. Cook and stir until vegetables have softened, about 10 minutes.

Lay half of each tortilla with the chicken and vegetable mixture. Then sprinkle with the Cheddar cheese, bacon, and Monterey Jack cheese.

Fold the tortillas in half and place on the baking sheet.

Bake until cheeses have melted, about 10 minutes.
