Betsy’s Cinnamon Crunch Granola


Ingredients

  • 3 cup rolled oats
  • 1 cup pecan pieces
  • 1/2 cup maple syrup
  • 1/3 cup melted butter or applesauce
  • 2 tsp vanilla extract
  • 1 tsp almond extract (optional)
  • 4 tsp cinnnamon
  • 1/4 tsp nutmeg
  • pinch of ground cloves
  • 1/2 tsp salt
  • 1/2 cup coconut flakes (can add more)
  • 1/2 cup dried fruit (can add more)

Directions

  1. Preheat oven to 250.
  2. In a large bowl, combine the rolled oats, coconut, and nuts. Set aside.
  3. In a small bowl, combine maple syrup, butter, vanilla, spices and salt. Add maple syrup mixture to the rolled oats. Stir until the dry ingredients are evenly coated.
  4. Line baking sheets with parchment paper. Spread granola evenly over the sheet.
  5. Bake for 30 minutes. Add coconut and dried fruit and stir. Bake for an additional 15 minutes. (Total time is 45 min.)
  6. Allow granola to cool on baking sheet until dry. Store in an air- tight container.
  7. THIS FILLS 3 CHRISTMAS JARS FROM CHRISTMAS TREE SHOP OR 7 SMALL BALL JARS.
