Blueberry French Toast


Ingredients

  • 12 slices of bread, cubed
  • 2- 8 oz packages cream cheese
  • 1 cup blueberries
  • 12 eggs
  • 1/3 cup maple syrup
  • 2 cup milk
  • Blueberry Syrup:
  • 1 cup sugar
  • 2 tbsp cornstarch
  • 1 cup water
  • 1 tbsp butter
  • 1 cup blueberries

Directions

  1. Spray a 9 X 13 baking pan.
  2. Arrange bread cubes in the bottom of the pan.
  3. Beat eggs. Add maple syrup and milk. Pour over the bread mixture. Cover lightly with foil.
  4. Refrigerate overnight or at least 3- 4 hours.
  5. Preheat oven to 350.
  6. Bake for 30 minutes covered. Then uncover and bake for an additional 30 minutes.
  7. Syrup: Stir sugar, cornstarch, and water in a saucepan over high heat.
  8. Add butter and blueberries. Cook until the blueberries pop. Serve warm over french toast.
