Harvest Muffins (Amy)


Ingredients

  • 1/4 cup margarine
  • 1 cup sugar
  • 1 cup canned pumpkin
  • 2 eggs
  • 1 1/4 cup flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp pumpkin pie spice
  • 1/2 cup milk
  • 1 cup mini or regular chocolate chips

Directions

  1. Preheat oven to 350.
  2. Cream margarine and sugar until light and fluffy.
  3. Add pumpkin and eggs. Blend on low.
  4. Combine dry ingredients. Add alternately with milk. Beat until well blended.
  5. Stir in chips.
  6. Bake regular size muffins for 20- 25 minutes or 3 mini loaves for 40- 45 minutes.
  7. 1 batch = 1 1/2 dozen muffins
