Cheesy Tater Tot Breakfast Casserole

  • 1 lb bacon, cooked & chopped
  • 1 lb ground breakfast sausage, no casings
  • 1 large yellow onion
  • 2 1/2 cup shredded sharp cheddar cheese, divided
  • 2 cup whole milk
  • 10 large eggs
  • 1 1/2 tsp freshly ground black pepper
  • 1 1/2 tsp onion powder
  • 1 tbsp ground mustard
  • 1 1/2 tsp salt
  • 2 lb frozen tator tots
  • 3 tbsp freshley chopped curly parsley

Directions

  1. Set out two skillets: one for bacon and one for sausage. You can cook the bacon in the oven, but cooking it in a skillet will give you yummy grease to cook the onion in.
  2. Cook bacon and set aside, you will not need the bacon until the casserole is nearly cooked. While bacon is cooking, chop up onion. Once bacon is done, cook onions in bacon grease.
  3. Cook sausage on medium high heat in the second pan, breaking up meet and browning it. Once cooked through, drain and layer onto bottom of a 13x9 in baking dish. On top of the sausage, layer the cooked onion. Then evenly sprinkle 2 cups of the cheese over the sausage and onions.
  4. In a large bowl, hand whisk together the milk, eggs, pepper, onion powder, ground mustard, and salt. Once mixed, pour evenly over the layers in baking dish. Layer top with frozen tator tots. If not baking right away, cover tightly with foil and chill in fridge until the next morning.
  5. When ready to bake, set oven to 375ºF with rack on lower middle position. Once heated, place casserole covered with foil in oven and bake for 1 hour. If egg still looks liquidy on top, bake additional 10-15min uncovered to firm up. Cut up/crumble cooked bacon while casserole bakes.
  6. Top with additional 1/2 cup cheese and cooked/crumbled bacon, bake another 5-10 minutes until top is golden brown and bubbling. Garnish with chopped parsley, let rest at room temp 10 minuted then cut and serve.
