Crustless Spinach Quiche


Ingredients

  • 8 eggs, beaten
  • 10 oz frozen chopped spinach, thawed and drained
  • 1 small onion, chopped
  • 2 cup shredded mozzarella cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp oil

Directions

  1. Preheat oven to 350. Lightly grease a pie pan.
  2. Heat oil in a pan. Saute onions until translucent.
  3. Stir in spinach. Contniue cooking until any excess moisture from the spinach is evaporated.
  4. In a large bowl, combine eggs, cheese, salt and pepper.
  5. Add spinach and onion mixture. Stir well.
  6. Pour into a pie pan.
  7. Bake for about 30 minutes or until eggs are set.
