Ingredients

8 eggs, beaten

10 oz frozen chopped spinach, thawed and drained

1 small onion, chopped

2 cup shredded mozzarella cheese

1/2 tsp salt

1/4 tsp pepper

1 tbsp oil
Directions

Preheat oven to 350. Lightly grease a pie pan.

Heat oil in a pan. Saute onions until translucent.

Stir in spinach. Contniue cooking until any excess moisture from the spinach is evaporated.

In a large bowl, combine eggs, cheese, salt and pepper.

Add spinach and onion mixture. Stir well.

Pour into a pie pan.

Bake for about 30 minutes or until eggs are set.
