Pumpkin Chocolate Chip Muffins (Amy)


Ingredients

  • 1/4 cup margarine
  • 1 cup sugar
  • 1 cup canned pumpkin
  • 2 eggs
  • 1 1/4 cup flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp pumpkin pie spice
  • 1/2 cup milk
  • 1 cup mini or regular chocolate chips

Directions

  1. Preheat oven to 350.
  2. Cream margarine and sugar until light and fluffy.
  3. Add pumpkin and eggs. Blend on low.
  4. Combine dry ingredients.
  5. Add alternately with milk. Beat until well blended.
  6. Stir in chocolate chips.
  7. Bake regular muffins for 20- 25 minutes, 3 mini loaves for 40-45 minutes, or mini muffins for 11 minutes.
  8. **** A double batch makes a tray of minis and 2 trays of regular muffins. Don't overfill cups. Only fill 2/3 full.
