Egg Casserole (Gluten Free)


Ingredients

  • 3/4 - 1 lb cooked bacon
  • 2 cup milk
  • 8 eggs
  • 1 tsp salt
  • 1 tsp pepper
  • 2 cup shredded Cheddar cheese
  • 1 onion, chopped
  • 1 red pepper, chopped
  • 3 thinly sliced red potatoes or enough to cover bottom of casserole dish

Directions

  1. Preheat oven to 375. (Turn to 350 if starting to get too brown.)
  2. Cook bacon and crumble into pieces.
  3. Place milk, eggs, salt and pepper in a bowl. Beat on medium speed until smooth and pale, about 5 minutes.
  4. Add bacon, cheese, onion and peppers. Beat until combined.
  5. Layer potato slices in bottom of a sprayed 9 X 13 pan. Pour egg mixture over potatoes. Cover with foil.
  6. Bake for 30 minutes. If getting too brown, decrease temperature to 350 and continue baking until set, about 60 minutes total.
