Egg Casserole (Gluten Free)


Ingredients

  • 1 lb bacon
  • 2 cup milk
  • 8 eggs
  • 1 tsp salt and pepper
  • 2 cup shredded cheddar cheese
  • 1 red pepper, chopped
  • 3 red potatoes

Directions

  1. Preheat oven to 350. Spray a 9 X 13 casserole.
  2. Cook bacon and crumble into pieces.
  3. Thinly slice potatoes. Lay in bottom of casserole.
  4. Place eggs, salt and pepper into a bowl. Beat until smooth and pale, about 5 minutes.
  5. Add bacon, Cheddar cheese, onion and red pepper. Beat until combined.
  6. Pour mixture over potatoes in casserole. Cover with foil.
  7. Bake about 35 minutes. Remove foil and bake about another 30 minutes until eggs are set.
