Chicken Zucchini Casserole

Ingredients

  • 6 oz package of boxed stuffing mix (Stove Top)
  • 1/2 cup melted butter
  • 4 cup diced zucchini (3-4 small zucchini)
  • 2 cup cubed cooked chicken (3 large Costco breasts)
  • 10.75 oz Cream of Chicken soup
  • 1/2 chopped onion
  • 1/2 cup sour cream

Directions

  1. Preheat oven to 350.
  2. In a large bowl, combine the stuffing mix and melted butter.
  3. Set aside 1/2 cup of the mixture for the topping.
  4. In a large bowl, add the zucchini, chicken, soup, onion and sour cream to the remaining stuffing.
  5. Place the zucchini mix into a greased 9 X 13 pan and spread out evenly.
  6. Sprinkle reserved 1/2 cup stuffing mix on top.
  7. Bake uncovered for 40 minutes or until golden brown.
