Chocolate Zucchini Cake

Ingredients

  • 1/2 cup butter
  • 1/2 cup vegetable oil
  • 1 3/4 cup sugar
  • 2 eggs
  • 1/2 cup buttermilk or sour milk- (add 1 1/2 t vinegar to milk)
  • 1 tsp vanilla
  • 2 1/2 cup flour
  • 1/4 cup cocoa
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cup grated zucchini
  • 3/4 cup chocolate chips- (more for top of cake)
  • 1/2 cup walnuts (if desired)

Directions

  1. Preheat oven to 350. Spray a 9 X 13 casserole.
  2. Cream butter. Add oil and sugar. Mix.
  3. Add next 9 ingredients. Mix well.
  4. Fold in the zucchini, chocolate chips, and walnuts by hand.
  5. Pour into a greased 9 X 13 pan. Sprinkle with chocolate chips if desired.
  6. Bake at 350 for 45 minutes.
  7. Serve with ice cream, powdered sugar, or a dollop of cool whip.
  8. ***GF- Using GF flour will work with this recipe.
  9. ***Can using icing on top.
