Corn Pie


Ingredients

  • pie crust mix (Jiffy)
  • 2 large potatoes
  • corn
  • 7 hard boiled eggs
  • butter
  • milk
  • salt and pepper

Directions

  1. Mix and roll out pie crust.
  2. Dice & cook potatoes.
  3. Using mom's smaller casserole, place part of the crust around sides of casserole. Layer potatoes, corn & eggs.
  4. Put butter & milk on top.
  5. Using remaining rolled crust, lay over top of casserole.
  6. Bake at 350° for 1 hour.
