Crockpot Cheesy Bacon Ranch Potatoes


Ingredients

  • 6 slices bacon
  • 3 lb red potatoes,chopped
  • 1 1/2 cup shredded cheddar cheese, divided
  • 1 tbsp Ranch seasoning and salad dressing mix
  • 2 tbsp chopped chives

Directions

  1. Cook bacon.
  2. Line crockpot with foil. Leave enough foil at top to wrap the potatoes. Spray foil with nonstick spray.
  3. Place a layer of potatoes evenly into crockpot. Top with cheese, Ranch seasoning and bacon. Repeat 2 more times. Reserve 1/2 cup cheese.
  4. Cover potatoes with aluminum foil. Cook on low heat for 7-8 hours or high heat for 3-4 hours.
  5. Sprinkle with remaining cheese. Cover and cook until melted, about 1-2 minutes. Top with chives. Serve immediately.
