Easy Vegetable Chowder


Ingredients

  • 5 cup Chopped/Diced Vegetables- Celery/Carrots/Peppers/Corn/Broccoli
  • 1/2 cup Diced Onion
  • 3 tbsp Butter
  • 4-1/2 cup Chicken Broth
  • 1-1/2 cup Milk
  • 1/4 cup Flour
  • 1 tsp Sage
  • Dash All Seasoning (any basic her-blend all-purpose seasoning)
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 cup Parmesan Cheese (or less)

Directions

  1. Melt butter in large saucepan.
  2. Add onion, all 5 cups vegetables, and half the chicken broth.
  3. Cover and cook on medium heat for 10-12 minutes until vegetables are soft. Whisk in flour.
  4. Whisk milk and seasonings together.
  5. Stir into vegetables, add remaining broth.
  6. Simmer for 15-20 minutes.
  7. Stir in cheese right before serving, heating just until melted.
  8. If you like your chowder a bit thicker, add 2-3 TBSP instant mashed potato flakes. Whisk them into the soup about 10 minutes into the simmer.
