Linda Pepley’s Baked Oatmeal


Ingredients

  • 1 1/4 cup oil
  • 3/4 cup sugar
  • 5 eggs
  • 2 1/2 cup milk
  • 1 1/4 tsp salt
  • 2 1/2 tbsp baking powder
  • 7 1/2 cup Quick oats
  • 2 cup fruit
  • Topping-
  • 1/2 cup brown sugar
  • 3 tsp cinnamon

Directions

  1. Preheat oven to 350.
  2. Mix all the oatmeal ingredients together.
  3. Put oatmeal mixture in a sprayed 9 X 13 or 2- 9 X 9 pans.
  4. Put topping mixture on top.
  5. Bake for 35 minutes.
  6. Linda uses blueberries, peaches, chocolate chips and fresh cranberries with walnuts.
