Ingredients

2 tbsp vegetable oil

3/4 lb cubed skinless, boneless chicken breast

chopped onion
-
chopped garlic
-
1/2 - (1.25) oz packet taco seasoning mix

1- (15 oz) can black bean, rinsed and drained

1- (8.75 oz) can sweet corn, drained
-
1/2 cup salsa (more if needed)

water as needed
-
1 cup shredded Mexican style cheese

1- 1/2 cup crushed tortilla chips

chopped tomatoes
Directions

Preheat oven to 350.

Cut chicken into pieces.

In a large skillet over medium heat, cook chicken pieces in oil with chopped onions and garlic.

Add taco seasoning, beans, corn, salsa and a little water to prevent drying out.

Cover skillet and simmer over medium low heat for 10 minutes.

Transfer chicken mixture to a 9 X 13 lined and sprayed baking dish.

Top with 1/2 cup of cheese, tomatoes, and crushed tortilla chips.

Bake for 15 minutes.

Add remaining 1/2 cup cheese.

Bake until cheese is melted and bubbly.
