Mexican Chicken Casserole


Ingredients

  • 2 tbsp vegetable oil
  • 3/4 lb cubed skinless, boneless chicken breast
  • chopped onion
  • chopped garlic
  • 1/2 - (1.25) oz packet taco seasoning mix
  • 1- (15 oz) can black bean, rinsed and drained
  • 1- (8.75 oz) can sweet corn, drained
  • 1/2 cup salsa (more if needed)
  • water as needed
  • 1 cup shredded Mexican style cheese
  • 1- 1/2 cup crushed tortilla chips
  • chopped tomatoes

Directions

  1. Preheat oven to 350.
  2. Cut chicken into pieces.
  3. In a large skillet over medium heat, cook chicken pieces in oil with chopped onions and garlic.
  4. Add taco seasoning, beans, corn, salsa and a little water to prevent drying out.
  5. Cover skillet and simmer over medium low heat for 10 minutes.
  6. Transfer chicken mixture to a 9 X 13 lined and sprayed baking dish.
  7. Top with 1/2 cup of cheese, tomatoes, and crushed tortilla chips.
  8. Bake for 15 minutes.
  9. Add remaining 1/2 cup cheese.
  10. Bake until cheese is melted and bubbly.
