Pasta Fagioli Soup (Olive Garden copycat)


Ingredients

  • 1 lb burger
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 1- 15 oz can kidney beans, drained
  • 1- 15 oz can white (cannellini) beans, drained
  • 2- 15 oz cans tomato sauce
  • 1- 15 oz diced tomatoes
  • 3 cup chicken broth
  • 1 tsp dried oregano
  • 1 cup ditalini pasta
  • salt and pepper to taste
  • grated parmesan, optional

Directions

  1. Cook the burger with the onion, minced garlic, carrots and celery. Season with salt and pepper. Cook until no longer pink. Drain the grease.
  2. Add in the kidney beans, white beans, tomato sauce, diced tomatoes, chicken broth, and oregano. Stir to combine.
  3. Once the liquid starts to boil, add in the pasta.
  4. Reduce the heat and cook for 10 minutes, or until pasta is done.
  5. Serve with chopped parsley and grated parmesan if desired.
