Ingredients

6 lb chicken breasts, cut into pieces (See number below.)

3 tbsp vegetable oil

1 can (8 oz) pineapple chunks, drained

1- 2 red peppers, cut into pieces

SAUCE
-
4 cup unsweetened pineapple juice

2 1/2 cup sugar
-
2 cup vinegar
-
1 1/2 cup water
-
2/3 cup cornstarch
-
1 cup packed brown sugar
-
1/2 cup ketchup
-
6 tbsp soy sauce
-
2 tsp chicken bouillon granules
Directions

Preheat oven to 350.

Heat oil in a large skillet. Add the chicken and brown on both sides.

Place in 2 sprayed or lined 9 X 13 pans.

In a saucepan, combine all sauce ingredients. Bring to a boil. Cook and stir for 2 minutes or until thickened.

Pour sauce over chicken.

Bake for 45 minutes.

Add pineapple and red peppers.

Bake 15 minutes longer or until heated through.

NOTE: For 1- 9 X 13 pan, use 7 Costco chicken breasts (5 breasts for 2 people). Cut sauce in half.
