Pineapple Chicken


Ingredients

  • 6 lb chicken breasts, cut into pieces (See number below.)
  • 3 tbsp vegetable oil
  • 1 can (8 oz) pineapple chunks, drained
  • 1- 2 red peppers, cut into pieces
  • SAUCE
  • 4 cup unsweetened pineapple juice
  • 2 1/2 cup sugar
  • 2 cup vinegar
  • 1 1/2 cup water
  • 2/3 cup cornstarch
  • 1 cup packed brown sugar
  • 1/2 cup ketchup
  • 6 tbsp soy sauce
  • 2 tsp chicken bouillon granules

Directions

  1. Preheat oven to 350.
  2. Heat oil in a large skillet. Add the chicken and brown on both sides.
  3. Place in 2 sprayed or lined 9 X 13 pans.
  4. In a saucepan, combine all sauce ingredients. Bring to a boil. Cook and stir for 2 minutes or until thickened.
  5. Pour sauce over chicken.
  6. Bake for 45 minutes.
  7. Add pineapple and red peppers.
  8. Bake 15 minutes longer or until heated through.
  9. NOTE: For 1- 9 X 13 pan, use 7 Costco chicken breasts (5 breasts for 2 people). Cut sauce in half.
