Pumpkin Bars


Ingredients

  • 2 cup flour
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 2/3 cup sugar
  • 1- 15 oz can pumpkin
  • 4 eggs
  • 1 cup cooking oil
  • 3/4 cup toasted chopped pecans
  • Cream Cheese Frosting
  • 2- 3 oz packages cream cheese (softened)
  • 1/2 cup butter (softened)
  • 1 tsp vanilla
  • 4 cup powdered sugar

Directions

  1. Preheat oven to 350.
  2. Stir together flour, baking powder, cinnamon, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat together sugar, pumpkin, eggs, and oil.
  4. Beat in the flour mixture until well mixed. If desired, stir in pecans.
  5. Spread batter in an ungreased 15 X 10 X 1" baking pan.
  6. Bake for 20- 25 minutes.

  8. Allow cream cheese and butter to stand at room temperature for 30 minutes.
  9. Beat cream cheese, butter and vanilla with an electric mixer on medium speed until light and fluffy.
  10. Gradually beat in powdered sugar to reach spreading consistency.
