Pumpkin Cheese Pie


Ingredients

  • Top layer:
  • 8 oz cream cheese
  • 1/4 cup sugar
  • 1/2 tsp vanilla
  • 1 egg
  • Pumpkin layer:
  • 1 1/4 cup pumpkin
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 eggs, beaten
  • 1 cup evaporated milk

Directions

  1. Preheat oven to 350.
  2. Beat cream cheese, sugar, vanilla and egg. Place on bottom of unbaked pie shell. (Don't use all the cream cheese mixture. It takes up too much space and doesn't leave enough room for pumpkin.).)
  3. Beat pumpkin, sugar, cinnamon, nutmeg, eggs and evaporated milk. Place on top of cream cheese mixture.
  4. Bake for 1 hour.
