Quinoa


Ingredients

  • 1/2 tbsp and 3/4 tsp butter
  • 3/4 cup uncooked quinoa
  • 1 1/2 cup vegetable or chicken broth
  • 1/2 tbsp chopped garlic
  • 1 1/2 tbsp chopped fresh parsley, oregano and basil
  • 3/4 small onion, finely chopped
  • 3/4 dash lemon juice

Directions

  1. Melt butter in a saucepan over medium heat. Add the quinoa and cook, stirring constantly until lightly browned, about 5 minutes.
  2. Stir in broth and bring to a boil. Reduce to a simmer, cover, and cook for 15 minutes or until quinoa is tender.
  3. Toss quinoa together with garlic, parsley, herbs, and onion. Cook a few minutes. Sprinkle with lemon juice and serve.
