Ingredients

1/2 tbsp and 3/4 tsp butter

3/4 cup uncooked quinoa

1 1/2 cup vegetable or chicken broth

1/2 tbsp chopped garlic

1 1/2 tbsp chopped fresh parsley, oregano and basil

3/4 small onion, finely chopped

3/4 dash lemon juice
Directions

Melt butter in a saucepan over medium heat. Add the quinoa and cook, stirring constantly until lightly browned, about 5 minutes.

Stir in broth and bring to a boil. Reduce to a simmer, cover, and cook for 15 minutes or until quinoa is tender.

Toss quinoa together with garlic, parsley, herbs, and onion. Cook a few minutes. Sprinkle with lemon juice and serve.
