Salmon with Orange Marmalade


Ingredients

  • 1/2 cup orange marmalade
  • 1/4 cup molasses
  • 2 tsp smoked paprika
  • 2 tbsp cider vinegar
  • 1 1/2 lb salmon
  • salt and pepper

Directions

  1. Preheat oven to 375 or heat grill to 375.
  2. Stir marmalade, molasses, paprika and vinegar together in a small bowl.
  3. Cut 2 pieces of wide, heavy duty foil about 6 inches longer than the salmon. Stack the foil pieces, shiny side down, on a baking sheet and spray generously with cooking spray.
  4. Place the salmon, skin side down, in the middle of the foil. Fold the foil sides and ends up 1- 2 inches to make a shallow pan around the salmon, leaving at least 1 inch around the fish. Season fish with salt and pepper. Do not cover the salmon with foil or close the foil over the salmon.
  5. If grilling, carefully transfer foil to center of preheated grill. Close grill and cook for 5 minutes. Spread glaze over the salmon. Close grill and cook for 5- 7 min more. Cook until fish is lightly translucent in the center. Remove from grill and let rest a few minutes before serving. Let the salmon set before serving.
  6. If cooking in the oven, follow same baking times. Might need more time in oven.
