Sweet Potato Casserole


Ingredients

  • 5 cup cooked sweet potatoes, mashed (about 5-6 medium sweet potatoes)
  • 3/4 cup granulated sugar
  • 8 tbsp butter, softened
  • 1 1/2 tsp vanilla extract
  • 1/2 cup milk
  • 2 eggs
  • Streusel Topping:
  • 1 cup brown sugar, packed
  • 1/2 cup flour
  • 1 cup chopped pecans
  • 4 tbsp butter, softened
  • 1/2 cup mini marshmallows, optional

Directions

  1. Preheat oven to 350.
  2. Scrub sweet potatoes. Boil or bake in oven until tender.
  3. Cool, peel and the mash sweet potatoes.
  4. Stir in granulated sugar, butter, vanilla, milk and eggs. Mix well.
  5. Pour mixture into a 9 X 13 baking pan.
  6. Topping: Mix brown sugar, flour, nuts, and butter together and spread evenly over sweet potato mixture.
  7. Bake for 30 minutes until topping has browned. (Bake longer if sweet potatoes are cold.)
  8. If using mini marshmallows, add them the last 10 minutes of baking.
