Ingredients

3 cup flour

1 tsp salt

1 tsp baking soda

1 tsp baking powder

2 tsp ground cinnamon

1 tsp nutmeg

3 eggs

1/2 cup vegetable oil

1/2 cup applesauce
-
2 1/4 cup sugar
-
3 tsp vanilla extract
-
2 cup shredded zucchini (1 large or 2 small zucchini))

1 cup chopped walnuts if desired

1 pint blueberries if desired

Preheat oven to 350.

Spray 2- 8 X 4 pans or 5 mini loaf pans.

Mix flour, salt, baking powder, baking soda, cinnamon, and nutmeg in medium bowl.

Beat eggs, oil, applesauce, vanilla and sugar together in a bowl.

Add dry ingredients to the creamed mixture and beat well. (Batter will be very thick.)

Stir in zucchini and nuts until well combined.

Pour batter into prepared pans.

Bake 40- 60 minutes for 8 X 4 pans or 25 minutes for mini loaf pans.

*** GF- Use 6 new Wilton small loaf pans. Add 10- 13 minutes additional time for GF flour.
