Zucchini bread


Ingredients

  • 3 cup flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 1 tsp nutmeg
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup applesauce
  • 2 1/4 cup sugar
  • 3 tsp vanilla extract
  • 2 cup shredded zucchini (1 large or 2 small zucchini))
  • 1 cup chopped walnuts if desired
  • 1 pint blueberries if desired

Directions

  1. Preheat oven to 350.
  2. Spray 2- 8 X 4 pans or 5 mini loaf pans.
  3. Mix flour, salt, baking powder, baking soda, cinnamon, and nutmeg in medium bowl.
  4. Beat eggs, oil, applesauce, vanilla and sugar together in a bowl.
  5. Add dry ingredients to the creamed mixture and beat well. (Batter will be very thick.)
  6. Stir in zucchini and nuts until well combined.
  7. Pour batter into prepared pans.
  8. Bake 40- 60 minutes for 8 X 4 pans or 25 minutes for mini loaf pans.
  9. *** GF- Use 6 new Wilton small loaf pans. Add 10- 13 minutes additional time for GF flour.
