Chocolate Chip Zucchini Muffins


Ingredients

  • 1 1/2 cup flour
  • 3/4 cup sugar
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp salt
  • 1 egg, lightly beaten
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tbsp lemon juice
  • 2 tsp vanilla extract
  • 1 cup shredded zucchini
  • 1/4 cup mini chocolate chips
  • 1/4 cup chopped walnuts

Directions

  1. This recipe makes 1 dozen. When making double batch, use 1/2 c oil + 1/2 c applesauce.
  2. Preheat oven to 350.
  3. In a bowl, combine flour, sugar, baking soda, cinnamon, nutmeg, and salt.
  4. Combine the egg, oil, milk, lemon juice and vanilla. Mix well.
  5. Stir into dry ingredients just until moistened.
  6. Fold in zucchini, chocolate chips, and walnuts.
  7. Fill paper-lined muffin cups two- thirds full. Makes 1 dozen.
  8. Bake for 20- 25 minutes.
  9. *** When making a double batch, use 1/2 cup oil and 1/2 cup applesauce.
