Zucchini Pizza Casserole


Ingredients

  • 4 cup shredded unpeeled zucchini
  • 1/2 tsp salt
  • 2 eggs, beaten
  • 1/2 cup grated Parmesan cheese
  • 2 cup shredded mozzarella cheese, divided
  • 1 cup shredded cheddar cheese, divided
  • lb burger or ground turkey
  • 1/2 cup chopped onion
  • 1 sweet red pepper, chopped
  • Homemade Pizza Sauce
  • 2 cans (15 oz each) tomato sauce
  • 1 can (12 oz) tomato paste
  • 1 tbsp Italian seasoning
  • 1 tbsp dried oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp salt

Directions

  1. Preheat oven to 400.
  2. Prepare pizza sauce- In a large saucepan over medium heat, combine tomato sauce and paste. Add remaining ingredients. Mix well. Bring to a boil, stirring constantly. Reduce heat. Cover and simmer for 1 hour, stirring occasionally.
  3. Place zucchini in colander. Sprinkle with salt. Let stand for 10 minutes. Then squeeze out moisture.
  4. Combine zucchini with eggs, Parmesan cheese, and half the mozzarella and cheddar cheeses.
  5. Press into a greased 13 X 9 dish. Bake 20 minutes.
  6. Meanwhile, in a large saucepan, cook beef and onion over medium heat. Drain.
  7. Add homemade pizza sauce, spooning over zucchini mixture.
  8. Sprinkle with remaining cheeses. Add red pepper.
  9. Bake until heated through, about 20 minutes.
  10. Let sit for 10 minutes before serving.
